I was surprised by how well lunch held me over!  I knew I had lots of calories to eat at dinner so I made pasta!  (You should never have fewer than 1200 calories on a given day, you can’t meet nutritional requirements that way). 


I made my usual alfredo sauce with bow ties (just realized I had it less than a week ago :)).  I only used three tablespoons parmesan because that’s all I had and I think I liked it better this way!


I topped my pasta with chicken seasoned with McCormick’s Roasted Garlic and Herb and some more of the onion and pepper mix.  I also stirred a green onion into the sauce.


It was very filling and very satisfying :) 

I just realized that today I had a serving of produce with every meal!

C25k Day 1

I did my first day of running today! 

It was much much harder than I expected.  I started this program before, but only got three weeks in before I was sick for a few days and then Christmas happened and I just wound up stopping.  I didn’t expect today to be so difficult since I did the first week before and really enjoyed it. 

I have halfway asthma.  I’ve never had an asthma attack but my airways do close off.  I was worried about this when I started researching running last time and I meant to use my inhaler before I left, but I forgot. I think that has a lot to do with my chest hurting.

Hopefully Wednesday will be better.

Turtle Food

The boy calls salads turtle food!  Probably because his sisters have a turtle that lives in the bath tub.  I like it.

After my run I had lunch. 


I made a simple salad with romaine, ranch, a turkey slice, and some parmesan.

After I figured out that the salad was only about 75 calories, I had a half sandwich on the side to make things a little more filling.


I still have lots of calories leftover so expect a big dinner!

Sorry this post is so late, I was playing on iTunes and didn’t realize I didn’t hit publish!

I think because I’ve been drinking so much water, if I try and have a glass of juice it’s just too strong!  I’m going to start watering it down and see if that makes it any better.

I woke up this morning ready to retry the apple juice oats.  And this time I think I got it!


Apple Spice Oats

  • 1/3 cup apple juice
  • 2/3 cup water
  • 1/2 Tablespoon chia seeds
  • cinnamon, nutmeg
  • blueberries sprinkled over the top (~1/4 cup)


I love having the option of frozen fruit to use whenever I feel like it.

Start living.

I read a quote that sums up the way I feel about my life lately.

This is exactly why I started my blog.  I want to live life with every ounce of effort I have, because it’s only so long.  It’s no surprise this deployment has been very hard on me and I’ve been letting it get the best of me for too long.  I know that he wouldn’t be happy with me to know I’ve been living this way, because I would be furious with him if things were reversed.  It’s time to start living my life.  I don’t want to look back and realize that I lost a year of my life moping because things didn’t work the way I wanted them to.  That’s just silly.

There are so many things I want to do, and I’m tired of sitting around waiting to do them.

Now, if the weather would warm up just a bit I’d get to do some of the things on my list!


I think I’m going to start adding a squirt of lemon juice to at least some of the water I have every day.  I was googling the health benefits of lemon juice, and just from the results, you can see that it wouldn’t be a bad idea.  I like lemon water, so I don’t see why this would be such a bad thing to do and it turns out it’s good for me!


I have been a picky eater for as long as I can remember. Where new foods excite some, they scare the crap out of me.  I’m working on that.  I enjoy food, so there’s no reason to limit the foods I enjoy.  I’m working to improve the variety in my diet, and to inject healthier foods into some of the foods I eat everyday. 

I did exactly this with my potato soup recipe


When I was boiling the potatoes I tossed in some broccoli to amp up the nutritional factor.  After they were finished, I ran the veggies through my food processor. 


What came out was almost identical to the soup I had last week, but just a little greener and a little healthier. 


I’ll take it.

Tomorrow starts day 1 of C25K!  I’ll let you know how it goes!

Yoga High

I was reading through blogs the other day and someone mentioned “yoga stoned”.  I don’t really like the word stoned, but a yoga high definitely describes the way I feel after a nice session on my mat.  I love it. 


I’m all for anything that makes me look like this.  Check out my shirt!

I just did a 30 minute Lunar Flow #1 YogaDownload.  In case I haven’t said it enough before, I LOVE THIS CLASS!!!  Seriously, I can’t get enough of it.  After I finished, I almost felt unsatisfied.  I wanted more!  I think it’s time to move up to a longer class.  I’d also like to find another class I enjoy so I don’t get tired of this one (I don’t think I ever could, but I don’t want to burn out on it.)  I might even do it again!

I’ve been thinking a lot lately about the healthy things I enjoy.  I love fresh fruit, but it’s a rarity for me to have it two days in a row.  I love salads but I don’t eat them that often.  I love yoga but I don’t do it as often as I’d like to.  I want to start injecting some of these healthy things I enjoy into my life It’s really silly to ignore them when they are so good for me and I already like them.

Why I Choose the Foods I Do


Breakfast and lunch this morning were pretty typical, and I don’t want to bore you with pictures of another turkey sandwich so I thought I’d talk about my food choices and goals.  Since this is a HUGE topic, I’m going to split it up into a few posts.

A few years ago while getting my degree I worked in a food production plant.  I got to see first hand what goes on when our food is mass produced, and at least at this plant it wasn’t pretty.  I acknowledge that this is a small representative of a massive industry, but what I saw was legitimately terrifying.  The truth is that every industry can be corrupt, but when it’s in the food industry our health is directly impacted. 

After my experiences at the food plant, I made the decision to avoid processed food.  Unfortunately, I can’t cut processed food completely out of my diet unless I start grinding my own flour and making my own cheese (more power to the people who do, but that is not for me), but I consciously try to avoid foods I can make myself like alfredo sauce.  This way I get to control whose hands touch my food as well as what ingredients go into making that food. 

Sure, glycerol monostearate could be perfectly safe, but with new research coming out every day telling us that additives are potentially dangerous, I’d rather not take my chances.  Since toxins can be stored in your body fat it seems to me that those products could reach toxic levels if you aren’t careful.  It’s just not a risk I’m willing to take.  Just today I read a discussion on how artificial food colorings affect adhd.  Maybe it doesn’t, and the placebo effect is taking place, but avoiding artificial products doesn’t hurt me any, so why not?  This is the stance I take on a lot of things.  If it doesn’t do any good, I’m not out too much, but if these products are harmful that’s one less toxic thing I come into contact with every day.

I’m taking steps to avoid artificial products.  Obviously, I’m not going to cut food out of my diet completely, but if there is a reasonable alternative I’ll take it.  I’m making changes for life, and if I start restricting myself I won’t be able to stick with it.

Whether you chose to eat organics, local food, raw, or none of the above, it is your choice.
