Little Pillows of Awesomeness

I can’t believe it took me this long to post lunch!  I’ve been a busy busy bee!


Sometimes I crave fast food.  Instead of caving in, I work to come up with something that’s a little better for me.  This recipe I came up with one day when I was craving nacho fries.  It’s been adjusted and changed a bit but it’s still really really good.

I peeled and cubed a potato into bite sized pieces before spraying it with cooking spray and baking it at 400* for twenty minutes.  They came out little pillows of awesomeness.  I layered them in a bowl. 


I topped them with 1/2 cup of the bell peppers and onion mix that I thawed for a few minutes in a skillet.


I then took my buffalo chicken dip and thinned it down a little bit with some milk to make a sauce.


It was mixed together and spread over a whole wheat tortilla.
