Comfort

Nothing sounded good for breakfast this morning, so I just grabbed a cliff bar out of the pantry.  It was pretty tasty!

All I could think about all morning was a sandwich wrapped in soft bread.  That’s exactly what I had for lunch!

Dinner was a big bowl of macaroni and cheese.

I mixed in some bell peppers to amp up the nutrient power.

Bricks

Soyjoy sent me a free bar through a facebook promotion a few days ago and it seemed like the perfect idea for breakfast.

Seriously.  That looks like something a dog left behind was formed into a brick.  I thought maybe I could get over it if it tasted okay so I took a bite and immediately threw it in the trash.  The texture was atrocious.  It was a mix between chalky and pasty and I couldn’t seem to chew it enough to get it out of my mouth. 

So, I won’t be purchasing these…ever.

As I was driving home for lunch I was thinking about what I wanted to have.  I completely forgot I had leftover calzone ready for me!

I took a couple bites before I remembered to get the picture, but it reheated wonderfully.  I will definitely be doing this again.

After my run today NOTHING sounded good.  I contemplated all sorts of stuff to no avail.  Finally I decided to make some mac and cheese.

It was not my best work.  I think it needed WAY more cheese. It was pretty bland, even with the buffalo sauce mixed in.

It’s cold and dreary outside which just makes me sleepy!  I’m going to curl up and watch a movie before I head to bed.

Creepy Crawly

So today, I was sitting in my apartment and I noticed a black spot on the wall, upon closer inspection this is what I saw:

I tried to get him with a piece of paper to take him outside but he jumped at me!  I ran into the kitchen to get a jar to carry him outside, but he was gone when I came back.  I know I’ll wake up with him on my face.  Just wait.

I had high hopes for dinner, but it just didn’t pan out.  Earlier I was thinking about the deceptively delicious recipes and how people hide veggies in foods to convince their kids to eat them.  I wondered if I could puree some bell peppers to add to the cheese sauce for my mac and cheese.

I squeezed the excess water out of them before I tried, but they just didn’t puree.  Oh well.  It was pretty good anyway.

After dinner I was feeling so restless I went for a walk.  It was wonderful!  I definitely this needs to happen more often.

Creamy Dreamy Mac and Cheesy

I realized the other day I promised I would post my mac and cheese recipe and never did.  So here’s my super easy and ridiculously tasty mac and cheese recipe.  It looks like a lot of steps but it’s super easy and so worth it.

1) Fill a pot with water and set it to boil

2) In a second pot, I add 1/2 cup milk

one tablespoon butter,

and one tablespoon flour.

3) Season the milk mixture with whatever spices you like.  I always add black pepper DSCN1143

and this time I added come cajun spice to kick up the heat a little.

Wisk everything together and stir it periodically until it thickens up.

4) When the water starts boiling, add a cup of pasta to the pot.

Play with your new candle while you’re waiting for the sauce to finish.

My extra sharp cheddar comes in a block of eight ounces.  I cut it into eight pieces of an ounce each.

5) Once the sauce is ready, remove it from heat and add one ounce block of grated cheddar. Wisk it quickly so it melts into the sauce.

This time I added two tablespoons of parmesan for a little more dimension.

6) Once the pasta is finished boiling, drain and toss it in the sauce pan.

7) Preheat the oven to 350*

8) Layer the macaroni and cheese in a baking dish with a little cooking spray.

9) Top the pasta with a tablespoon or two of parmesan.

10) Then top it with a tablespoon of breadcrumbs.  I added some cajun spice on top of this as well.

11) Pop the pan in the oven until the parmesan melts.

Play with the candle some more while waiting.

It doesn’t take very long before you have a big bowl of creamy cheesy pasta!

Comforting

I was feeling some comfort food tonight so I made a big bowl of mac and cheese.

Remember a few days ago when I decided to start adding a squirt of lemon juice to my water?

I’ve been adding a little to every bottle I fill and I realized last night that I don’t think I’ve sneezed at all in the last few days.  I’m normally not a sneezer unless I’m sick, but it seems like ever since I moved here I sneeze at least once a day, and it’s been getting worse.  The other day I woke up and played sudoku for a little bit and in the ten minutes it took me to play I sneezed eight times.  So not sneezing definitely is a nice change.

I realize that it could be any number of things improving my allergies, but it seems strange that when I start doing something different it changed.  And I don’t mind drinking it, so I don’t see a reason to stop even if it didn’t fix anything.

If it hasn’t been clear yet, I have spring fever BAD.  I get pretty bad about it normally, but now that I’m living in such a different climate it’s driving me nuts (it was 82 at home today).  It also doesn’t help that warmer weather means the boy will be coming home.  I’m so anxious for all the big things spring has to offer, and it’s just refusing to show its face.

Disaster!

I like to keep boxed macaroni and cheese around for a rainy day.  Some days I don’t feel like cooking and it’s nice to know I have something that’s quick, easy, and edible available for those times.

Today I played with it, a little too much.  I cooked the pasta and some broccoli and cauliflower.  After cutting the veggies into pieces the size of the pasta, I tossed them together and then halved it.  I mixed the sauce in a separate container so I could refrigerate it without the pasta absorbing the sauce leaving me with a gross mess. 

This little guy escaped becoming dinner 🙂

After I shot these pictures I mixed in a spoonful of plain yogurt (sour cream) in an attempt to add some flavor.  It was awful.
