Everything is still in boxes and impossible to find.  I had coffee and graham bunnies for breakfast.


But they were wonderful!



Lunch was a little rushed because I had lots of phone calls to make.  I ate leftover Caesar salad while I worked to see where the boy’s computer was (it’s lost in the mail.  I’m not even kidding)



Today was my first run in my new fitness center.  I think these are higher quality treadmills.  I didn’t have any static issues and the treadmill didn’t feel as “squishy”.  I think I’m going to like it here.  Today went well.  I’m glad I am redoing week 3 since I took so much time off, but I don’t seem to have regressed too far.


I was starving after my run, so I set some millet to start cooking while I showered.  I love self cooking meals!

This morning all I wanted was another fresh baked roll.  So that’s what I had!


It’s a happy coincidence that the butter looks like a face Smile


I can’t get over how long these hold me over!  I was full for hours!



I had a coupon for a free sample of Philadelphia’s new cooking crème and while I was a little unsure about this I was willing to try it and grabbed the “Santa Fe” variety. 


As soon as I brought it home I knew I wanted to make chicken salad with it. 


I sautéed some chicken until fully cooked and stirred the cream cheese in.


Which I then layered on a bed of spinach and romaine (I’m not a fan of spinach’s texture but it’s so nutritious I figured I could mix it with romaine for some crunch).


And I topped it with a few chipotle cashews for some extra texture.


It was good, but not something I couldn’t have made myself with fewer calories.  It really just tasted like cream cheese mixed with salsa.  I guess it’d be great for people who are too busy to cook, but it’s probably not something I would have paid for.



However,  that didn’t stop me from turning it into pasta sauce a few hours later.


Now this was something special, albeit ugly.  The flavors blended together so well, it was wonderful!




I’m feeling a little melancholy today.  I’m ready for the next few months to be over and to be done with this distance thing.  I’m ready to know he’s safe.  Just a few more weeks and he’ll be home.  I’m trying to stay positive.

I took my lunch later today and on my drive home all I could think about was a big bowl of salad!  Always go with what you crave.


I made a pretty basic salad with romaine, fat free ranch, wheat berries, and queso fresco. 


It was so good!  Sometimes the simplest of foods are the best.

Spring Green

As soon as I finished breakfast I was already planning lunch (I already have dinner in mind too) and couldn’t wait to dig into a quesadilla!


I whipped up some green onion quesadillas (240 cal) and served the triangles over a bed of romaine with some fat free ranch (40 cal for the salad).  It was a super fresh, super filling lunch!


I’m excited for dinner!

Here’s hoping

Here’s to hoping this post goes up.


Since it’s a holiday, I thought I would celebrate by adding sprinkles to my oatmeal Smile.


I made vanilla oats this morning with a side of lemon water.   To give the oats a little more texture I mixed in 1/4 cup wheatberries.  I love the chew!


They were so fun!


I thought it would be fun to eat green food today.  Salads are green Smile


I made a salad of romaine topped with 1/4 cup wheat berries and some queso fresco with Italian dressing.


It was very simple but very good!

Snip Snip

I have tried to post lunch on and off for two days!  After a lot of troubleshooting hopefully this might work Sad smile


After my run I was craving some flavors only Quiznos could provide, so I ran over and got my typical Sammy and SunChips.


It hit the spot!


I’ve been needing a haircut BAD for a while.  It’s been nearly a year since I had one.

I tried to take a before picture, but it just turned into lots of bloopers.  How on earth do people successfully take mirror pictures?

This is the best before I got:


And this is after:  Not as big of a difference as I expected, but it looks a lot cleaner and my bangs are fixed.


Maybe someday I’ll get it figured out!


Dinner was fantastic:

I cooked some diced chicken and mixed it with some of the tri color peppers and onion.  I then stirred it in an ounce of my buffalo chicken dip.  It’s a variation of my recipe for company, stuffed chicken, so I call it “unstuffed chicken”.  Complete with a bottle full of water.


It’s very filling and very very tasty!




Yoga tomorrow for day two of my big getting in shape challenge!
