Buffalos

This dinner was all I could think about on my way home!  I stopped by the grocery store for yogurt and PopChips!

Buffalo chicken wraps were exactly what I needed after such a long day.  Stuffed with lots of romaine!

Gorgeous breakfast for a gorgeous morning!

Next time I’ll cook the berries into the oatmeal.  It was too cold!  Good thing I had some hot coffee on the side.  I was a little sleepy this morning so I had TWO cups.  I was practically bouncing off the wall when I finished!

Lunch wasn’t as pretty, or as good.

I made a wrap with romaine, Swiss, and some cajun spice for fun.

After some unpacking and running up and down the stairs, I made millet for dinner, topped with some chicken.

I have great news!  But first, Breakfast:

I had a peanut butter sandwich for breakfast.

It held me over super well!  I was surprised.

Lunch was a sandwich.

Unfortunately my turkey was icky looking.  It was more like a salad between two slices of bread.  Not my best lunch.

However, during lunchtime I had a knock on the door.  My camera was here!

I still have lots to learn but so far I’m loving it!

Dinner was a wrap with pre-prepared chicken, swiss cheese, lettuce, and a flour tortilla.  I really wanted cheddar jalapeno tortillas but they didn’t have any!

Pressure

Truth is, I do not handle stress well.  This week has been terribly stressful.  So much so that I lost my appetite and made myself sick.  I tend to let things build up bigger and bigger until things explode. 

The good news is I got the apartment and won’t be homeless next year!  I really didn’t know what I was going to do if I didn’t get it.  Not having a plan b freaks me out.

I noticed recently that knitting helps a lot.  It gives me something else to focus on.

I really need to work on stress management.

Sometimes I have a really hard time figuring out what to have for dinner.  Today was one of those days.  I finally settled on making buffalo chicken wraps and once I had everything cooked I realized I only had one tortilla.

Despite my best efforts, I just couldn’t get it to wrap up, so I ate it with a fork 🙂

Little Pillows of Awesomeness

I can’t believe it took me this long to post lunch!  I’ve been a busy busy bee!

Sometimes I crave fast food.  Instead of caving in, I work to come up with something that’s a little better for me.  This recipe I came up with one day when I was craving nacho fries.  It’s been adjusted and changed a bit but it’s still really really good.

I peeled and cubed a potato into bite sized pieces before spraying it with cooking spray and baking it at 400* for twenty minutes.  They came out little pillows of awesomeness.  I layered them in a bowl.

I topped them with 1/2 cup of the bell peppers and onion mix that I thawed for a few minutes in a skillet.

I then took my buffalo chicken dip and thinned it down a little bit with some milk to make a sauce.

It was mixed together and spread over a whole wheat tortilla.
