As soon as I finished breakfast I was already planning lunch (I already have dinner in mind too) and couldn’t wait to dig into a quesadilla!
I whipped up some green onion quesadillas (240 cal) and served the triangles over a bed of romaine with some fat free ranch (40 cal for the salad). It was a super fresh, super filling lunch!
I’m excited for dinner!
I don’t know what it is about this week but it’s kicking my butt. I hope this isn’t a sign that the rest of the program will be super difficult. I felt sluggish and way behind.
When I first started running my ankles were sore. Almost like I’d been holding them weird all day. It straightened out pretty quickly, but It didn’t help things any. We’ll see how Wednesday goes, I may need to redo this week’s run a couple more times.
Today’s lunch, however, was amazing.
I made one of my favorite recipes in the world:
Green Onion Quesadillas
- Two corn tortillas
- plain greek yogurt
- green tomatillo sauce
- green onions
- and queso fresco
I spread the yogurt and the sauce on the tortillas and sandwich the cheese and green onions between them, heat on the George Foreman grill until melty goodness. It’s perfectly wonderful and a super quick and easy meal. I love them!

Today I have officially lost ten pounds since I started!
It really hasn’t been as bad as I expected. I have been successful by weighing myself each day and keeping a food log. This way I know how many calories I have left for the day and can adjust what I eat accordingly.
I still would like to lose ten more pounds, but I’m making great progress so far!
I like to keep Cliff Bars around for a snack or something during the day. Today I had my favorite bar, White Chocolate Macadamia Nut. It was awesome.
After those yummy quesadillas yesterday, I made another variation today.
I added pesto, bell pepper, green onion, and queso fresco in a whole wheat tortilla and heated it on the George Foreman until the cheese was nice and melty.
It was so fresh and good! I loved it!
I’m trying to consider content ideas. Is there anything different you would like to see here?
The boy was born in Mexico so Americanized “Mexican” food really puts him off. Luckily, quesadillas are more traditional and these taste awesome.
Normally I use corn tortillas and green sauce in them, but I had neither and decided to improvise.
I used whole wheat tortillas and stuffed one with yogurt (sour cream), queso fresco, and peppers and onions from my freezer. The other I stuffed with yogurt, queso fresco, and green onion.
I think I liked the green onion one better, but they were both VERY good! Such a quick and easy lunch with amazing results.
